Sweet Potato and Pecan Salad with Lime

Serves 4

2 medium sweet potatoes, scrubbed but unpeeled
1 medium red onion, thinly sliced
1 red bell pepper, seeded and cut into strips
1/2 cup pecan halves
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lime juice
1/2 teaspoon sea salt
Small handful chopped fresh cilantro
Pinch of cinnamon (optional)

Preheat oven to 375 F (190 C). Cover the sweet potatoes with water in a large pot, bring to a boil, then simmer for 15 minutes. Drain, then slice sweet potatoes into 1/2 inch rounds.

Coat a large baking dish with 1 tablespoon of extra-virgin olive oil. Arrange the sweet potato rounds, red onion slices, and red pepper slices in the dish, and bake for 15 minutes or until all vegetables are tender.

While vegetables are baking, saut pecans and cinnamon in 1 tablespoon of extra virgin olive oil over low heat for about 2 minutes.

Remove vegetables from oven. Drizzle fresh lime juice over them. Season with sea salt, to taste.

Lightly toss with crispy pecan mixture. Let the entire dish cool down for about 10 minutes before serving. Garnish with fresh cilantro just before serving.

Enjoy this antioxidant-rich, healthy and delicious sweet potato and pecan salad with lime dish!

Why eat more alkaline?

The average American diet is 90% Acid (e.g. sugar, animal and dairy products, and yeast breads), and 10% Alkaline. The ideal diet would be 80% Alkaline and 20% Acid. An alkaline inner terrain creates healthy, vital cells which produce lean and trim bodies, clear and bright eyes, energy and vitality, and mental clarity.

How we become Toxic

Lack of Water- water makes up 65% to 75% of the human body. It is second only to oxygen in order of importance to sustain life. Water cleanses the inside of the body as well as the outside..

Over-Consumption- overeating puts a tremendous amount of stress on our digestion system. Most people eat too much food, too fast. Foods are not properly broken down and lodge in the lower intestines. Vital nutrients are NOT absorbed.

The body needs the right fats. Look for cold pressed extra virgin olive oil, flax seed oil, Udo’s oil, grape seed oil and avoid seed oils. Refrigerate after opening and keep in a dark place. Cooking oils makes them acidic, so cook with water and add your oil(s) at the end for taste. If you must use oil to cook with, use grape seed oil, it can stand a higher temperature before it breaks down.

Men who drink two or more sugary soft drinks a day have an 85 percent higher risk of gout than those who drink less than one a month, according to U.S. and Canadian researchers.

Gout has been increasing steadily in the UK in recent years, and the researchers believe it is linked to a rise in soft drink consumption over the same period.

During the 12-year study, 46,000 men aged 40 and over were asked questions about their diet.

The risk of developing gout significantly increased among men who drank five to six servings of sugary soft drinks a week. Fruit juice and fructose-rich fruits such as oranges and apples also increased the risk.

Gout causes painful, swollen joints, usually in your lower limbs, caused when uric acid crystallizes out of your blood into your joints. Fructose is known to inhibit the excretion of uric acid, which may help to explain the study’s

When the pH level in one’s body is unbalanced, almost any area of the body can be affected; nervous system (depression), cardiovascular system (heart disease), muscles (fatigue), skin (aging), etc. Even obesity is a sign of over-acidity, a normal body response which protects vital organs from damaging acids and their effects. Conversely, in an alkaline environment, the body reaches an ideal weight and corrects negative health challenges naturally.

Large vegetable salad with sun-dried black olives and avocado.

Pack a large container of field greens with a handful of sun-dried black olives (available at most olive bars in grocery stores). Include any fresh vegetables that you enjoy, like celery, cucumber, carrots, bell peppers, and sprouts.

Also pack a whole avocado that has been cut in half, but keep the two halves together with the seed inside to keep the cut surfaces from browning. Wrap your cut avocado to keep it together until you’re ready to eat.

Come lunch time, enjoy your fresh vegetable salad with avocado on the side. Feel free to add your favorite dressing to the mix for extra flavor. If you need more calories than this salad provides, add chickpeas, or have a whole grain pita along with the salad.

Don’t let breakfast slow you down.

An energizing breakfast for many people new to the Alkalizing diet is millet or brown, basmati rice with fresh avocado, tomato slices, soaked almonds, sunflower sprouts and flax oil. In contrast, most foods and beverages people choose to begin the day do not increase energy. breakfast cereals, sweet rolls, toast, pancakes, waffles, muffins, oatmeal, maple syrup, honey, coffee, orange juice, etc., contain huge amounts of sugars and simple carbohydrates which over-acidify the blood and tissues. Even high-protein breakfast foods like eggs, sausage, bacon, omelets, etc., compromise the terrain and ultimately promote the growth of yeast and fungi.
